Method

Preparation

  1. 1

    Prepare the Melon

Preheat your grill to medium-high heat. Cut the watermelon and honeydew into thick slices. Brush them lightly with olive oil and sprinkle with salt and black pepper.

  2. 2

    Grill the Melon

Grill the melon slices for about 3-4 minutes on each side until they have nice grill marks and are slightly softened. Remove from grill and let cool.

  3. 3

    Cook the Surf and Turf

In a skillet, heat 2 tablespoons of olive oil over medium heat. Season the shrimp and steak with garlic powder, paprika, salt, and pepper. Cook the steak for about 4-5 minutes on each side for medium-rare, and the shrimp for about 2-3 minutes until pink. Remove from heat and let rest.

Assembly

  1. 4

    Assemble the Salad

In a large bowl, combine the mixed greens, cherry tomatoes, and cucumber. Cut the grilled melon into bite-sized pieces and add to the salad.

  2. 5

    Add Surf and Turf

Slice the steak and add it along with the cooked shrimp to the salad.

  3. 6

    Dress the Salad

In a small bowl, whisk together balsamic vinegar, honey, olive oil, salt, and pepper. Drizzle the dressing over the salad and toss gently to combine.
