Brewing Process

1. Mashing

In a large pot, heat 5 gallons of water to 165°F (74°C). Add the Pale, Caramel, and Munich malts. Maintain the temperature at around 150°F (65°C) for 60 minutes.

2. Lautering

After mashing, separate the liquid (wort) from the grains. Rinse grains with hot water to extract more sugars (sparging).

3. Boiling

Bring the wort to a boil. Once boiling, add Citra hops and boil for 60 minutes. Add Cascade hops with 15 minutes left in the boil and Simcoe hops with 5 minutes left.

4. Cooling

Cool the wort down to about 70°F (21°C) using a wort chiller or an ice bath.

5. Fermentation

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the American Ale yeast and seal with an airlock. Allow to ferment for about 1-2 weeks at 68°F (20°C).

6. Bottling

After fermentation, dissolve priming sugar in a small amount of water and add it to the beer. Bottle the beer and cap it. Let it carbonate for another 1-2 weeks.
