Prepare Sweet Potato Confit

Cook Sweet Potatoes

Peel and cube the sweet potatoes. In a saucepan, combine sweet potatoes, olive oil, salt, and pepper. Cook on low heat for about 1 hour until tender.

Make Lobster Roe Velouté

Prepare the Velouté

In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually add fish stock while whisking until smooth. Add heavy cream and lobster roe, then season with salt and white pepper. Simmer for 10 minutes.

Cook Halibut

Sear the Fish

Season the halibut fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the halibut for 3-4 minutes on each side until cooked through.

Prepare Asparagus

Char Asparagus

Toss white asparagus with olive oil, salt, and pepper. Grill or char on a grill pan for about 5-7 minutes until tender and slightly charred.

Assemble the Dish

Plate the Dish

On a plate, place a scoop of confit sweet potatoes, top with seared halibut, drizzle with lobster roe velouté, and garnish with prawn chips and charred asparagus.
