    Marinate the Chicken

    In a large bowl, combine the jerk marinade, olive oil, lime juice, and salt. Add the jerk chicken pieces and ensure they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Vegetables

    While the chicken is marinating, chop the bell peppers, red onion, garlic, and scallions into bite-sized pieces.

    Cook the Rice

    In a medium pot, bring 4 cups of water to a boil. Add the rice and a pinch of salt. Reduce the heat to low, cover, and simmer for 20 minutes until the rice is cooked and water is absorbed.

    Cook the Chicken

    Preheat the grill or oven to medium-high heat. Remove the chicken from the marinade and place it on the grill or a baking dish. Cook for about 6-8 minutes per side or until the internal temperature reaches 165°F (75°C).

    Sauté the Vegetables

    In a skillet over medium heat, add a little olive oil and sauté the bell peppers, onion, garlic, and scallions for about 5-7 minutes until they are tender.

    Heat the Black Beans

    In a small pot, heat the canned black beans over medium heat until warm. Season with salt and pepper to taste.

Serving

    Plate the Dish

    On a large serving platter, fluff the rice and place it at one side. Arrange the grilled jerk chicken on top of the rice. Serve the sautéed vegetables and heated black beans on the side. Garnish with fresh cilantro.
