Cook the Chicken
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breasts with salt, pepper, cumin, and chili powder. Add the chicken to the skillet and cook for about 6-7 minutes on each side until cooked through. Remove from heat and let it rest.

Sauté Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and red bell pepper, sauté for about 5 minutes until softened. Add minced garlic and cook for another 1-2 minutes until fragrant.

Prepare the Filling
Dice the cooked chicken into bite-sized pieces. In a large bowl, combine the chicken, sautéed vegetables, cooked rice, drained black beans, and half of the shredded cheddar cheese. Mix well and season with additional salt and pepper to taste.

Wrap the Burrito
Lay a tortilla flat on a clean surface. Spoon about 1/4 of the filling mixture onto the center of the tortilla. Sprinkle with a bit more cheddar cheese. Fold the sides over the filling and then roll from the bottom upwards to form a burrito. Repeat with remaining tortillas and filling.

Slice the burritos in half and serve warm with sour cream, salsa, and chopped cilantro on the side.
