Preparation of Steak

    Marinate the Steak

    In a bowl, combine olive oil, lime juice, minced garlic, ground cumin, ground black pepper, and salt. Mix well. Place the flank steak in a resealable plastic bag or a shallow dish and pour the marinade over it. Seal the bag or cover the dish, and refrigerate for at least 1 hour (or up to overnight for better flavor).

    Grill the Steak

    Preheat your grill to medium-high heat. Remove the steak from the marinade and let excess marinade drip off. Grill the steak for about 6-8 minutes on each side for medium-rare, or longer to reach your desired doneness. Use a meat thermometer for accuracy (130-135°F for medium-rare).

    Once cooked, remove the steak from the grill and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.

    Thinly slice the rested flank steak against the grain to ensure tenderness.

    Heat the corn tortillas on the grill or in a skillet for about 30 seconds on each side until warm.
