Cooking the Rice

Prepare the Rice
In a medium saucepan, combine 1 cup of long-grain white rice, 2 cups of water, and 0.5 tsp of salt.

Cook the Rice
Bring the mixture to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and water is absorbed.

Fluff the Rice
Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.
Preparing the Beans

Heat the Beans
In a small saucepan, heat the canned black beans over medium heat.

Sauté the Chicken
In a skillet over medium heat, add 1 tbs of olive oil. Once heated, add 1 cup of shredded cooked chicken breast.

Season and Cook the Chicken
Sprinkle with 1 tsp of chili powder and 0.5 tsp of salt. Cook for about 5-7 minutes, stirring frequently until the chicken is heated through and well coated with spices.
Assembly of the Burrito

Warm the Tortillas
Warm the large flour tortillas in a dry skillet or microwave for a few seconds until pliable.

Layer the Ingredients
On each tortilla, layer 1/4 cup of rice, 1/4 cup of beans, and 1/4 cup of seasoned chicken.

Add Toppings
Top with 1/4 cup of shredded cheese, a dollop of sour cream, a spoonful of salsa, and a sprinkle of chopped cilantro.

Roll the Burrito
Fold the sides of the tortilla inward, then roll it up tightly from the bottom to enclose the filling.

Repeat with remaining tortillas and filling.
