Doughnut Preparation

Make the Doughnut Batter
In a large bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, mix the ricotta cheese, eggs, milk, vanilla extract, and lemon zest until smooth. Combine the wet ingredients with the dry ingredients until just mixed. Gently fold in the diced pear.

Preheat Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Doughnuts
Using a spoon or small ice cream scoop, drop the batter into the hot oil. Fry in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare the Filling
Once the doughnuts are cool, fill them with lemon curd using a piping bag or squeeze bottle.

Make Roasted Pistachio Sugar
In a food processor, pulse roasted pistachios with granulated sugar until finely ground. Roll the filled doughnuts in the pistachio sugar before serving.

Serve the doughnuts warm, alongside peach & ginger jam for dipping.
