Harvesting Grapes
Harvest Cabernet Sauvignon grapes in the early morning to preserve freshness.
Crushing and Destemming
Crush and destem the harvested grapes in a sanitized container.

Add water and yeast to the crushed grapes, mix well, and cover the container with a cloth. Allow the mixture to ferment for 7-10 days at room temperature.
Pressing
After fermentation, press the mixture to separate the liquid from the solids. Collect the juice in a clean vessel.
Aging
Add oak chips to the pressed juice and store it in a cool, dark place for at least 6 months to develop flavors.
