Salad Preparation

Roast the Garlic
Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and drizzle with a tablespoon of olive oil. Roast in the oven for about 30 minutes, or until soft and caramelized. Once done, let cool and then squeeze out the garlic into a bowl.

Prepare the Dressing
In a bowl, combine the roasted garlic, balsamic vinegar, and remaining olive oil. Whisk together until well combined. Season with salt and black pepper to taste.

Prepare the Vegetables
Slice the cucumber and red onion thinly. Halve the cherry tomatoes.

Assemble the Salad
In a large bowl, combine the mixed greens, sliced cucumber, cherry tomatoes, and red onion. Drizzle with the roasted garlic balsamic vinaigrette and toss gently to combine.

Finish with Feta Espuma
To create the feta espuma, blend the feta cheese with a bit of water in a blender until smooth and creamy. Drizzle over the salad before serving.

Serve immediately, garnished with any extra feta or fresh herbs if desired.
