Thick Cut Fries
Method
Prepare the Fries

Cut the Potatoes
Wash and cut the Russet potatoes into thick fries (about 1/2 inch thick).

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the fries and pat them dry. Fry them in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Season the Fries
While still hot, sprinkle with salt and pepper to taste.
Prepare the Grilled Cheese

Cook the Bacon (optional)
If adding bacon, cook it in a skillet until crispy, then set aside.

Grill the Sandwich
Cook for 3-4 minutes until the bottom is golden brown, then flip and grill the other side until the cheese melts and the bread is golden brown, about another 3-4 minutes.

Serve
Cut the grilled cheese in half and serve alongside the thick cut fries.
