Preparation and Cooking

    Prepare the Meatloaf

    Preheat the oven to 350°F (175°C). In a large bowl, mix the ground chicken, egg, breadcrumbs, salt, and black pepper until well combined. Form the mixture into a loaf shape and place it in a baking dish.

    Add Tikka Masala

    Pour half of the tikka masala sauce over the meatloaf and bake it in the preheated oven for about 45 minutes, or until the internal temperature reaches 165°F (74°C).

    Prepare the Sides

    While the meatloaf is baking, boil the red potatoes in salted water until tender, about 15-20 minutes. Drain and toss with olive oil, salt, and pepper.

    Sauté Broccoli Rabe

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped broccoli rabe and sauté for about 5-7 minutes until wilted. Season with salt and pepper to taste.

    Crisp the Shallots

    Thinly slice the shallots and fry them in a small pan with the remaining olive oil over medium heat until golden brown and crispy. Drain on paper towels.

    Finish the Meatloaf

    Once the meatloaf is done baking, remove it from the oven and let it rest for 10 minutes. Serve with the remaining tikka masala sauce on the side.

    Plate the Dish

    Slice the meatloaf and serve it on a platter with the boiled red potatoes, sautéed broccoli rabe, crispy shallots, and garnish with chopped scallions.
