Preparation Steps
Prepare the Custard
In a bowl, whisk together the eggs, milk, heavy cream, vanilla extract, and brown sugar until smooth.
Soak the Brioche
Dip each slice of brioche in the custard mixture, allowing it to soak for a few seconds on each side.
Cook the French Toast
In a large skillet over medium heat, melt 2 tablespoons of butter. Cook the soaked brioche slices for about 3-4 minutes on each side until golden brown. Repeat with remaining slices, adding more butter as needed.
Roast the Peaches
Preheat the oven to 400°F (200°C). Cut the peaches in half, remove the pits, and place them cut side up in a baking dish. Sprinkle with brown sugar and roast for 20-25 minutes until caramelized.
Prepare the Creamed Caramel Sauce
In a saucepan, melt 1 cup of brown sugar with 1/4 cup of water over medium heat. Stir until the sugar dissolves, then let it boil without stirring until it turns a deep amber color. Remove from heat and carefully whisk in the heavy cream.
Serve
Place a slice of French toast on a plate, top with roasted peaches, drizzle with creamed caramel sauce, sprinkle with shortbread crumble, and finish with a dollop of whipped cream.
