Prepare the Dough
In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Heat Oil
In a deep pot, heat vegetable oil over medium heat until it reaches 350°F (175°C).
Fry the Donut Holes
Using a small ice cream scoop or spoon, drop small balls of dough into the hot oil. Fry until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
Coat with Cinnamon Sugar
In a shallow bowl, combine sugar and cinnamon for coating. While the donut holes are still warm, toss them in the cinnamon sugar mixture until well coated.
