    Prepare the Vegetables

    Preheat your oven to 425°F (220°C). Cut the eggplant, zucchini, and carrots into even slices. Toss the sliced vegetables with olive oil, salt, and black pepper.

    Roast the Vegetables

    Spread the vegetables on a baking sheet in a single layer. Roast in the oven for 20-25 minutes or until tender and slightly caramelized, turning halfway through.

    Blanch the Asparagus

    While the vegetables are roasting, bring a pot of salted water to a boil. Add the asparagus and blanch for 2-3 minutes until bright green and tender-crisp. Drain and transfer to ice water to stop cooking.

    On a separate baking sheet, place the rustic bread slices and toast them in the oven for about 5-7 minutes until golden brown.

    On a serving platter, arrange the roasted vegetables, blanched asparagus, and sliced roasted red bell pepper. Tear the burrata into pieces and place it on top. Drizzle with romesco and chimichurri sauces.
