    Prepare the Sauce

    In a large skillet or saucepan, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy. Then add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Brown the Meat

    Add the ground beef to the pan and cook until browned. Stir in the minced garlic and cook for another minute.

    Deglaze and Simmer

    Pour in the red wine and let it simmer for a few minutes until it reduces slightly. Then add the crushed tomatoes, oregano, salt, and black pepper. Stir well and bring to a gentle simmer.

    Slow Cook

    Reduce the heat to low and let the sauce simmer for at least 30-45 minutes, stirring occasionally. The longer it simmers, the better the flavors will meld together.

    Cook the Pasta

    While the sauce is simmering, cook the tagliatelle according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.

    Combine and Serve

    Once the sauce is ready, mix the cooked tagliatelle with the sauce until well coated. Serve topped with dollops of ricotta cheese, grated Parmesan, and fresh basil for garnish.
