Mediterranean Bowl Preparation

    Prepare the Couscous

    In a medium saucepan, bring 1.5 cups of water to a boil. Add the Israeli couscous and a pinch of salt. Reduce heat to low, cover, and simmer for about 10 minutes or until the water is absorbed. Remove from heat and let sit covered for an additional 5 minutes.

    Grill the Shrimp

    Preheat a grill or grill pan over medium-high heat. Toss the shrimp with olive oil, salt, and pepper. Grill the shrimp for about 2-3 minutes on each side until they are pink and opaque. Remove from grill and set aside.

    Prepare the Vegetables

    Dice the cucumber, tomato, and red onion. Chop the parsley. Set aside.

    Make the Lemon Oregano Vinaigrette

    In a small bowl, whisk together lemon juice, dried oregano, olive oil, salt, and pepper to taste.

    Assemble the Bowl

    In a large bowl, combine the cooked couscous, grilled shrimp, cucumber, tomato, red onion, feta cheese, olives, spinach, and parsley. Drizzle with the lemon oregano vinaigrette and toss gently to combine.

    Serve the Mediterranean bowl with pita bread on the side.
