Marinate the Chicken
Remove the seeds from the habanero peppers and finely chop them. In a bowl, combine chopped habaneros, buttermilk, salt, and black pepper. Cut chicken into bite-sized pieces and add to the marinade. Cover and refrigerate for at least 1 hour or overnight for best results.

Prepare the Breading
In a large bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, and cayenne pepper. Set aside.

Make the Bleu Cheese Sauce
In a medium bowl, combine bleu cheese, sour cream, mayonnaise, and lemon juice. Mix until smooth and creamy. Adjust seasoning if needed.

Coat and Fry the Chicken
Heat oil in a deep fryer or large pot to 350°F (175°C). Remove chicken pieces from marinade, allowing excess to drip off. Dredge in the prepared breading until fully coated. Fry in batches until golden brown and cooked through, about 5-7 minutes per batch. Drain on paper towels.
