Prepare the Artichokes
Preheat your oven to 400°F (200°C). Trim the tops of the artichokes and remove any small leaves at the base. Cut them in half lengthwise and scoop out the fuzzy choke with a spoon.

Season the Artichokes
In a bowl, mix olive oil, minced garlic, lemon juice, fresh herbs, red pepper flakes, salt, and black pepper. Brush this mixture generously over the cut sides of the artichokes.

Roast the Artichokes
Place the artichokes cut side down on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, until they are tender and golden.

Prepare the Topping
While the artichokes are roasting, mix the bread crumbs and grated Parmesan cheese in a bowl. After 30 minutes, take out the artichokes and flip them cut side up.

Add the Topping and Finish Roasting
Sprinkle the bread crumb mixture over the roasted artichokes and return to the oven. Roast for an additional 10-15 minutes until the topping is golden brown and crispy.

Remove from the oven, let cool slightly, and serve warm as an appetizer or side dish.
