Duck Spring Rolls Preparation

    Prepare the Duck

    Preheat the oven to 375°F (190°C). Season the duck breasts with salt and pepper. Place them skin-side up on a baking sheet and roast for about 20-25 minutes, or until the skin is crispy and the meat is medium-rare. Let cool, then shred the meat.

    Make the Ginger-Scallion Soy Sauce

    In a small bowl, mix together the soy sauce, sesame oil, rice vinegar, grated ginger, and minced garlic. Set aside.

    Assemble the Spring Rolls

    Soak one rice paper wrapper in warm water for about 10-15 seconds, or until pliable. Lay the wrapper flat on a clean surface. Place a small amount of shredded duck, shredded carrots, cucumber, and cilantro in the center of the wrapper. Fold the sides in and roll tightly from the bottom up. Repeat with remaining wrappers and filling.

    Serve the spring rolls with the ginger-scallion soy sauce on the side for dipping.
