Prepare the bread
Cut the brioche bread into 1-inch cubes and place them in a large mixing bowl.

Mix the custard
In a separate bowl, whisk together the milk, heavy cream, granulated sugar, brown sugar, eggs, vanilla extract, and salt until well combined.

Pour the custard mixture over the cubed brioche bread and gently fold to combine. Let it sit for about 15 minutes, allowing the bread to absorb the liquid.

Transfer the mixture into a greased baking dish and bake in the preheated oven for 45-50 minutes, or until the top is golden and the custard is set.
