    Prepare the Ingredients

    Shred the smoked chicken and chop the avocado. If using brisket, slice it into thin pieces.

    Cook the Brisket (if using)

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the brisket and cook until heated through, about 5 minutes. Remove and set aside.

    Cook the Smoked Chicken

    In the same skillet, add another tablespoon of olive oil. Add the shredded smoked chicken, salt, and pepper. Cook for about 5 minutes until heated through.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack eggs individually into small bowls, then gently slide them into the water. Poach for about 3-4 minutes for runny yolks. Remove with a slotted spoon.

    On a serving plate, layer the smoked chicken (or brisket), and top with poached eggs. Add sliced avocado and a generous amount of tomatillo salsa.
