Prepare Spice Mix

    In a dry skillet over medium heat, toast the coriander seeds, cumin seeds, black peppercorns, and fenugreek seeds until fragrant, about 2-3 minutes. Be careful not to burn them.

    Once toasted, let the spices cool slightly, then grind them into a fine powder using a spice grinder or mortar and pestle.

Cook the Dish

    Sauté the Aromatics

    In a large pot, heat vegetable oil over medium heat. Add the finely chopped onion and sauté until it turns golden brown, about 5-7 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

    Incorporate Tomatoes
