Mousse Preparation

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

    Prepare Egg Mixture

    In a separate bowl, whisk the eggs and granulated sugar together until the mixture is pale and fluffy. This should take about 5 minutes.

    Combine Ingredients

    Slowly fold the melted chocolate into the egg mixture, being careful not to deflate the eggs. Add a pinch of salt and vanilla extract, and mix until fully combined.

    Whip the Cream

    In another bowl, whip the 300 ml of heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until no white streaks remain.

    Chill the Mousse

    Spoon the mousse into individual serving glasses or bowls. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

    Whip the Cream

    In a mixing bowl, combine the 150 ml of heavy cream, powdered sugar, and vanilla extract. Whip until stiff peaks form.

    Serve

    Once the mousse is set, top each mousse with a generous dollop of whipped cream before serving.
