1. Prepare the Onions
Melt butter and olive oil in a large pot over medium heat. Add the sliced onions and cook, stirring frequently, for about 30-40 minutes until they are caramelized and golden brown.
2. Deglaze the Pot
Add the dry white wine to the pot to deglaze, scraping up any browned bits from the bottom. Allow the wine to simmer for about 5 minutes.
3. Add Broth and Seasoning
Stir in the beef broth, thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.
4. Prepare the Bread
While the soup is simmering, preheat your oven to 400°F (200°C). Place the sliced baguette on a baking sheet and toast in the oven for about 5-7 minutes until golden.
5. Serve the Soup
Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, place a slice of toasted baguette on top of each, and sprinkle generously with grated Gruyère cheese.
