Deglaze the Pot
Add the dry white wine to the pot to deglaze, scraping up any browned bits from the bottom. Allow the wine to simmer for about 5 minutes.

Add Broth and Seasoning
Stir in the beef broth, thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.

Prepare the Bread
While the soup is simmering, preheat your oven to 400°F (200°C). Place the sliced baguette on a baking sheet and toast in the oven for about 5-7 minutes until golden.

Place the bowls under the broiler for 3-5 minutes, or until the cheese is melted and bubbly. Watch closely to avoid burning.
