Marinade Preparation

    Prepare the Marinade

    In a large bowl, combine the pineapple juice, white vinegar, dried oregano, ground cumin, chili powder, minced garlic, salt, black pepper, paprika, ancho chili powder, and chipotle chili powder. Mix well until uniform.

    Marinate the Pork

    Cut the pork shoulder into 1-inch cubes and add it to the marinade. Ensure that all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade, allowing excess marinade to drip off. Cook the pork for about 10-15 minutes, turning occasionally, until fully cooked and slightly charred. The internal temperature should reach 145°F (63°C).

    Rest the Pork

    Once cooked, remove the pork from the heat and let it rest for 5 minutes before chopping it into smaller pieces.

Assembling the Tacos

    Prepare the Tortillas

    Warm the corn tortillas in a skillet or microwave until soft and pliable.

    Place a portion of the chopped pork onto each tortilla. Top with diced pineapple, onion, and chopped cilantro. Squeeze fresh lime juice over the top.
