Prepare the Meat

Season the steak or chicken with olive oil, salt, and black pepper. Let it marinate for about 15 minutes.

Grill the Meat

Preheat the grill or skillet over medium-high heat. Grill the meat for about 6-7 minutes per side (for steak) or 4-5 minutes per side (for chicken), or until fully cooked. Remove from heat and let it rest for a few minutes before slicing.

Warm the Tortillas

In a separate skillet, warm the flour tortillas over medium heat for about 30 seconds on each side, just until they are warm and pliable.

Assemble the Tacos

Slice the grilled meat into thin strips. Place a portion of the meat into each warm tortilla, folding them gently. Set aside.

Mix Ingredients

In a mixing bowl, combine diced tomatoes, diced onion, minced jalapeño, chopped cilantro, and lime juice. Stir well to combine and let it sit for about 10 minutes for the flavors to meld.

Serve the cooked rice and refried beans in small bowls alongside the tacos. Keep the tomatillo sauce in a separate bowl for dipping.
