Method

Preparing Chicken

    Marinate the Chicken

    In a bowl, combine olive oil, garlic powder, salt, and black pepper. Add chicken breasts and coat evenly. Let marinate for at least 30 minutes.

    Grill the Chicken

    Preheat the grill to medium-high heat. Grill the marinated chicken breasts for 6-7 minutes on each side or until fully cooked (internal temperature of 165°F). Remove from the grill and let rest.

Making Ranchero Sauce

    Prepare the Vegetables

    Chop tomatoes, onion, garlic, and jalapeño into small pieces.

    Cook the Sauce

    In a saucepan over medium heat, add the chopped vegetables and cook until softened (about 10 minutes). Stir in cilantro, lime juice, and salt. Cook for an additional 5 minutes, then remove from heat.

Assembling the Dish

    Top the Chicken

    Place grilled chicken breasts on a serving plate. Spoon ranchero sauce over each piece and sprinkle with cheddar cheese. Cover with a lid or foil to melt the cheese.

    Slice the avocado and tomato. Top the chicken with avocado slices, jalapeño slices, and a dollop of sour cream. Garnish with shredded lettuce.
