Method
Preparing the Shrimp
Cook the Shrimp
In a pot of boiling salted water, add the peeled and deveined shrimp. Cook for about 3-4 minutes until the shrimp turn pink and opaque. Drain and let cool.
Marinate the Shrimp
Once cooled, chop the shrimp into bite-sized pieces and mix them with Clamato juice and fresh lime juice in a bowl. Refrigerate for at least 30 minutes to let the flavors meld.
Making the Pico de Gallo
Combine Ingredients
In a separate bowl, combine diced tomatoes, finely chopped onion, chopped cilantro, and jalapeño. Season with salt and mix well.
Let it Sit
Allow the pico de gallo to sit for at least 15 minutes so the flavors can blend.
Assembling the Coctel de Camaron
Mix Everything Together
In a large serving bowl, combine the marinated shrimp with the pico de gallo. Gently toss to combine.
Add Avocado
Top the mixture with sliced avocado.
