Sopes Preparation

Make the Dough
In a mixing bowl, combine masa harina, salt, and water. Mix until a smooth dough forms.

Shape the Sopes
Divide the dough into 8 equal pieces. Roll each piece into a ball, then flatten it into a disc about 1/2 inch thick. Pinch the edges to create a small raised border.

Cook the Sopes
Heat vegetable oil in a skillet over medium heat. Cook each disc for about 2-3 minutes on each side until lightly golden. Remove and set aside.
Chile Guajillo Salsa Preparation

Prepare the Chiles
Remove the stems and seeds from the guajillo chiles. Soak them in hot water for about 15 minutes until they soften.

Blend the Salsa
In a blender, combine softened guajillo chiles, garlic cloves, onion, vegetable broth, and salt. Blend until smooth. Adjust seasoning to taste.

Heat the Salsa
Pour the blended salsa into a saucepan and simmer for about 10 minutes to deepen the flavors.

Spread a layer of refried beans on each sopes base. Top with shredded chicken, lettuce, diced tomato, and queso fresco.
