Prepare Shrimp

    Sauté the Shrimp

    In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Cook the Shrimp

    Add the raw shrimp to the skillet. Season with paprika, salt, and black pepper. Cook for 3-4 minutes, or until the shrimp are pink and opaque. Remove from heat.

Prepare Vegetables

    Chop the Vegetables

    While the shrimp is cooking, chop the bell peppers, onion, and jalapeño (if using) into small pieces.

Assemble Nachos

    Layer the Nachos

    On a large baking sheet, spread out the tortilla chips evenly. Sprinkle the sautéed shrimp on top.

    Add Cheese

    Sprinkle both cheddar and Monterey Jack cheese generously over the shrimp and chips.

    Add Vegetables

    Evenly distribute the chopped bell peppers, onion, and jalapeño over the cheese layer.

Bake

    Bake the Nachos

    Preheat your oven to 200°C (400°F). Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.

Serve

    Add Garnishes

    Remove nachos from the oven and let cool for a minute. Top with dollops of sour cream, sprinkle fresh cilantro, and serve with lime wedges on the side.
