Preparation of Chicken

Marinate the Chicken
In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add the chicken breasts and coat evenly. Let it marinate for at least 30 minutes.

Grill the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and set aside.

Add Milk and Cheese
Slowly whisk in the milk, stirring constantly until the mixture thickens. Then add the cheddar and Monterey Jack cheeses, stirring until melted and smooth. If using, stir in the diced jalapeños.
Plating

Assemble the Dish
Place the grilled chicken breasts on a serving plate. Pour the cheese sauce generously over the chicken.

Add Garnishes
Top with shredded lettuce, a dollop of guacamole, a scoop of sour cream, and sprinkle diced tomatoes over the top for garnish. Serve immediately.
