Method

Marinate the Chicken

    Prepare Marinade

    In a blender, combine allspice, thyme, scotch bonnet peppers, garlic cloves, grated ginger, brown sugar, soy sauce, lime juice, and salt. Blend until smooth.

    Marinate Chicken

    Place the chicken pieces in a large bowl or zip-lock bag. Pour the marinade over the chicken, ensuring all pieces are well coated. Cover and refrigerate for at least 2 hours or overnight for best flavor.

Cook the Chicken

    Preheat Oven or Grill

    Preheat your grill or oven to 375°F (190°C).

    Cook Chicken

    Grill the marinated chicken for about 30-40 minutes, turning occasionally, until fully cooked. If baking, place in a baking dish and bake for 35-45 minutes or until the internal temperature reaches 165°F (75°C).

Prepare the Rice and Beans

    In a saucepan, combine the rice and coconut milk with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed.

    Stir in black beans and chopped green onions into the rice. Cook for an additional 5 minutes until heated through.
