    Prepare the Ingredients

    Wash and chop the bell peppers and onion into bite-sized pieces. Mince the garlic cloves.

    Cook the Chicken

    In a skillet over medium heat, add a little olive oil and cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked. Season with salt, black pepper, and chili powder.

    Cook the Chorizo

    In the same skillet, add the pork chorizo and cook for about 5-6 minutes, breaking it up with a spatula until browned and cooked through.

Rice Cooking

    Cook the Rice

    In a medium saucepan, combine the long grain rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the water is absorbed. Fluff with a fork before serving.

Refried Beans Preparation

    Heat the Refried Beans

    In a small pot, heat the canned refried beans over medium heat. Stir in olive oil and cumin, mixing well until heated through.

    Add Cheese

    Once heated, sprinkle the cheddar cheese on top of the refried beans and allow it to melt before serving.

Assembly

    Serve the Dinner

    On a plate, serve a portion of rice, a scoop of refried beans topped with melted cheese, and the cooked chicken and chorizo mixture. Garnish with additional bell pepper and onion if desired.
