Prepare the Oil
In a deep frying pan or skillet, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

Cut the Tortillas
While the oil is heating, stack the corn tortillas and cut them into 6 wedges each to form triangles.

Fry the Chips
Once the oil is hot, carefully add a handful of tortilla wedges to the oil. Do not overcrowd the pan. Fry for about 2-3 minutes or until they are golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. While they're still hot, sprinkle with salt to taste.

Mix the Salsa
In a mixing bowl, combine the chopped tomatoes, onion, jalapeño, and cilantro. Add lime juice and salt, and mix well.

Taste and Adjust
Taste the salsa and adjust the seasoning with more salt or lime juice if needed. Let it sit for at least 15 minutes before serving to allow the flavors to meld.
