Preparing the Broth

    In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 3-4 minutes.

    Chop the tomatoes and add them to the pot along with cumin, salt, and black pepper. Cook for another 2-3 minutes until the tomatoes break down.

    Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and let it cook for 15-20 minutes.

    Prepare the Chile Pasilla

    While the broth is simmering, roast the chile pasilla in a dry skillet until fragrant. Remove seeds and stems, then chop them into small pieces.

Final Assembly

    Cut the tortillas into strips and fry them in a bit of oil until crispy. Set aside on a paper towel to drain.

    Dice the avocado and crumble the panela cheese into small pieces.
