Rinse the Rice
Place the long-grain white rice in a fine-mesh strainer and rinse it under cold running water until the water runs clear. This helps remove excess starch.

Soak the Rice
In a large bowl, combine the rinsed rice and 4 cups of water. Let it soak for at least 4 hours or overnight for the best flavor.

Blend the Mixture
After soaking, transfer the rice and soaking water to a blender. Add the cinnamon sticks and blend on high until the rice is finely ground, about 1-2 minutes.

Strain the Liquid
Pour the blended mixture through a fine-mesh sieve or cheesecloth into a large bowl or pitcher to strain out the solids. This will yield a smooth liquid.

Chill and Serve
Refrigerate the horchata for at least 2 hours to chill. Serve over ice and garnish with a sprinkle of cinnamon if desired.
