Prepare the Chiles
Remove the stems and seeds from the dried guajillo and ancho chiles. Toast them lightly in a dry skillet over medium heat for about 2-3 minutes until fragrant, being careful not to burn them.

Blend the Marinade
In a blender, combine the toasted chiles, garlic cloves, cumin, oregano, pineapple juice, apple cider vinegar, salt, pepper, and brown sugar. Blend until smooth.

Marinate the Pork
Cut the pork shoulder into large chunks and place it in a bowl. Pour the marinade over the pork, ensuring all pieces are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Rest the Pork
Once cooked, remove the pork from heat and let it rest for 10 minutes before slicing.

Thinly slice the pork against the grain into bite-sized pieces.

Warm the Tortillas
In a skillet, warm the corn tortillas over medium heat for about 30 seconds on each side or until pliable.

Assemble the Tacos
On each tortilla, place a portion of sliced pork, topped with diced pineapple, chopped cilantro, and finely chopped onion. Squeeze fresh lime juice over the top.

Serve the tacos immediately with lime wedges on the side.
