    Cut the beef chuck roast and lamb shank into large chunks. Season with salt and set aside.

Preparing the Spice Blend

    In a dry skillet, toast the dried guajillo and ancho peppers over medium heat for 2-3 minutes until fragrant. Remove stems and seeds.

    In a spice grinder or mortar and pestle, grind the toasted peppers along with cumin seeds, black peppercorns, and oregano until fine.

Cooking the Birria

    In a large pot, heat a bit of oil over medium heat. Add chopped onion and minced garlic cloves. Sauté until translucent.

    Add the meat chunks to the pot, followed by the ground spice blend, bay leaves, beef broth, and water. Stir to combine.

    Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for 2-3 hours, or until the meat is tender.

Serving

    Chop fresh cilantro and diced onion. Cut lime into wedges.
