Preparation of Shrimp

Marinate the Shrimp
In a mixing bowl, combine the peeled and deveined shrimp with olive oil, lime juice, garlic powder, chili powder, salt, and black pepper. Toss well to ensure the shrimp are evenly coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Prepare the Peppers and Onions
While the shrimp is marinating, preheat your oven to 425°F (220°C). On a baking sheet, spread out the sliced bell peppers and onion. Drizzle with olive oil and season with a pinch of salt and pepper. Toss to coat and spread them out in a single layer.

Roast the Vegetables
Roast the vegetables in the preheated oven for 20-25 minutes, or until the peppers are tender and slightly charred, stirring halfway through for even cooking.
Cooking the Shrimp

Cook the Shrimp
Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 3-4 minutes, or until they are pink and opaque, stirring occasionally. Remove from heat.

Warm the Tortillas
In a dry skillet or directly over a gas flame, warm the flour tortillas for about 30 seconds on each side until they are pliable.

To assemble, lay a few pieces of roasted peppers and onions on a warm tortilla, top with cooked shrimp, and garnish with fresh cilantro and a squeeze of lime juice. Serve immediately with lime wedges on the side.
