Prepare the Refried Beans
In a small saucepan, heat the refried beans over medium heat until warmed through, stirring occasionally. Once heated, set aside.

Prepare the Ranchero Sauce
If using store-bought ranchero sauce, simply heat it in another small saucepan over low heat until warmed. If making homemade ranchero sauce, prepare it according to your recipe and keep it warm.

Cook the Eggs
In a non-stick skillet, heat a small amount of oil over medium-low heat. Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny, about 3-4 minutes. Season with salt and pepper to taste.

Warm the Tortillas
In a separate dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable. Keep warm in a cloth or tortilla warmer.

Assemble the Rancheros
On each warmed corn tortilla, spread a generous spoonful of refried beans. Top each with a sunny side up egg. Pour ranchero sauce over the egg and beans generously. Add a handful of pico de gallo and sprinkle shredded cheese on top.

Serve immediately while hot, garnished with additional pico de gallo and cheese if desired.
