Prepare the Tomatillos
Remove the husks from the tomatillos and rinse them under cold water. Cut them into quarters.

Melt the Cheese
In a skillet over medium heat, combine the Oaxacan cheese and Monterey Jack cheese. Stir continuously until the cheese is fully melted and gooey.

Add Tomatillos
Once the cheese is melted, add the quartered tomatillos to the skillet. Stir gently to incorporate the tomatillos into the melted cheese.

Season
Season the mixture with salt and black pepper to taste. Continue to cook for another 2-3 minutes until the tomatillos are heated through.
Serving

Garnish and Serve
Transfer the queso fundido to a serving dish. Top with chopped cilantro and red onion. Squeeze fresh lime juice over the top before serving. Enjoy with tortilla chips or warm tortillas.
