Prepare the cactus
Boil the sliced cactus in salted water for about 10 minutes until tender. Drain and set aside.

Prepare the salsa
In a mixing bowl, combine diced tomatoes, onion, cilantro, lime juice, and salt. Mix well and set aside.

Prepare the stuffed peppers
If not already stuffed, fill the halved bell peppers with a mixture of rice, beans, or cheese as desired.

Cook the proteins
In a large skillet or a molcajete, heat some oil over medium heat. Cook the marinated shrimp for about 3-4 minutes until pink. Remove and set aside. In the same skillet, cook the steak strips for 4-5 minutes until browned and cooked through. Remove and set aside. Finally, cook the chicken strips for about 6-7 minutes until golden and cooked through.

Combine all ingredients
In the same skillet, add the cooked cactus and green onions. Stir for 2 minutes until combined. Add the shrimp, steak, and chicken back to the skillet. Toss everything together for another 2-3 minutes to heat through.

Serve
Arrange the mixture on a serving platter or in a molcajete. Place the stuffed peppers around the protein mixture. Top with cubed panela cheese and serve with the fresh salsa on the side.
