Prepare the Chicken
Cut the chicken breast into strips, about 1 inch wide.

Bread the Chicken
Dip each chicken strip first in flour, shaking off the excess, then in the beaten eggs, and finally coat with the breadcrumb mixture. Ensure each piece is well-coated.

Heat Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

Cook Chicken Fingers
Fry the breaded chicken strips in batches, cooking for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
