Method

Preparation of Marinade

  1. 1

    Mix the Marinade

In a bowl, combine the olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Whisk until well combined.

Marinating the Steak

  1. 2

    Marinate the Hanger Steak

Place the hanger steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Roasting Vegetables

  1. 3

    Prepare the Vegetables

While the steak is marinating, preheat your oven to 425°F (220°C). Slice the bell peppers and onion into thin strips.

  2. 4

    Roast the Peppers and Onions

Spread the sliced bell peppers and onion on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat and roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.

Cooking the Steak

  1. 5

    Cook the Hanger Steak

Heat a grill or skillet over medium-high heat. Remove the steak from the marinade and discard the marinade. Grill the steak for about 4-5 minutes per side for medium-rare, or until desired doneness is reached. Let the steak rest for 5 minutes before slicing thinly against the grain.

Assembling Fajitas

  1. 6

    Prepare Tortillas and Serve

Warm the tortillas in a dry skillet or microwave. To serve, layer the sliced steak, roasted peppers, and onions on each tortilla. Top with fresh cilantro and serve with lime wedges on the side.
