Caramel

Method

Caramel Preparation

  1. 1

    Make the caramel

In a medium saucepan, combine the granulated sugar and water. Heat over medium heat, stirring gently until the sugar dissolves. Once dissolved, stop stirring and allow the mixture to boil.

  2. 2

    Cook until golden

Continue to cook the sugar mixture without stirring until it turns a deep amber color, about 8-10 minutes. Carefully watch to avoid burning.

  3. 3

    Coat flan mold

Immediately pour the caramel into a round flan mold or a loaf pan, tilting to coat the bottom evenly. Set aside to cool and harden.

Custard Preparation

  1. 4

    Blend the custard ingredients

In a blender, combine the sweetened condensed milk, evaporated milk, eggs, and vanilla extract. Blend on high until smooth and well combined, about 30 seconds.

  2. 5

    Pour into mold

Carefully pour the custard mixture over the hardened caramel in the flan mold.

  3. 6

    Prepare for baking

Preheat your oven to 350°F (175°C). Prepare a water bath by placing the flan mold in a larger baking dish and filling the outer dish with hot water halfway up the sides of the flan mold.

  4. 7

    Bake

Bake in the preheated oven for about 50-60 minutes, or until the center is set and a knife inserted comes out clean.

  5. 8

    Cool and chill

Remove the flan from the water bath and allow it to cool at room temperature for about 30 minutes. Then refrigerate for at least 4 hours or overnight.

  6. 9

    Serve

To serve, run a knife around the edges of the flan. Invert onto a serving plate to release the caramel sauce. Cut into slices and enjoy!
