Prepare Salsa Verde

    Cook Tomatillos

    In a pot, boil water and add the tomatillos. Cook for 5-7 minutes until they soften, then drain.

    Blend Salsa Verde

    In a blender, combine the cooked tomatillos, jalapeño, chopped onion, cilantro, lime juice, and salt. Blend until smooth. Adjust seasoning to taste.

Assemble Enchiladas

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Soften Tortillas

    In a skillet over medium heat, warm each corn tortilla for about 30 seconds on each side until pliable.

    Fill Tortillas

    Place about 2 tablespoons of shredded chicken and 1 tablespoon of cheese in the center of each tortilla. Roll the tortillas tightly to enclose the filling.

    Layer Enchiladas

    Spread a layer of salsa verde in the bottom of a baking dish. Place the rolled enchiladas seam-side down in the dish. Pour remaining salsa verde over the top, and sprinkle with extra cheese.

    Bake

    Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly.

Serve

    Add Toppings

    Once out of the oven, let the enchiladas cool for a few minutes. Drizzle with crema, and top with sliced radishes and red onions.
