Prepare Salsa Verde

Cook Tomatillos
In a pot, boil water and add the tomatillos. Cook for 5-7 minutes until they soften, then drain.

Assemble Enchiladas

Preheat Oven
Preheat your oven to 350°F (175°C).

Soften Tortillas
In a skillet over medium heat, warm each corn tortilla for about 30 seconds on each side until pliable.

Fill Tortillas
Place about 2 tablespoons of shredded chicken and 1 tablespoon of cheese in the center of each tortilla. Roll the tortillas tightly to enclose the filling.

Layer Enchiladas
Spread a layer of salsa verde in the bottom of a baking dish. Place the rolled enchiladas seam-side down in the dish. Pour remaining salsa verde over the top, and sprinkle with extra cheese.

Once out of the oven, let the enchiladas cool for a few minutes. Drizzle with crema, and top with sliced radishes and red onions.
