Prepare the Churro Dough

In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Heat over medium-high heat until the mixture comes to a boil.

Once boiling, remove the saucepan from heat and immediately stir in 1 cup of all-purpose flour until the mixture pulls away from the sides of the pan and forms a ball.

Let the dough cool for a minute, then add 2 large eggs one at a time, mixing well after each addition until the dough is smooth and elastic. Stir in 1 teaspoon of vanilla extract.

In a shallow bowl, combine 1 cup of granulated sugar and 2 teaspoons of ground cinnamon. Set aside for coating the churros.
