Prepare Pancake Batter

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, salt, and cinnamon until well combined.

    Combine Wet Ingredients

    In a separate bowl, whisk together the milk, eggs, and vanilla extract until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; small lumps are okay.

    Melt Butter

    In a small pan over low heat, melt the butter and then fold it into the pancake batter.

Cook Pancakes

    Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

    Pour about 1/4 cup of batter onto the hot skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
