Prepare the Tortillas
Cut the corn tortillas into triangles, each tortilla should be cut into 6-8 pieces.

Heat the Oil
In a large skillet or deep frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of tortilla; it should sizzle upon contact.

Fry the Chips
Carefully add a handful of the tortilla triangles into the hot oil. Fry them for about 2-3 minutes or until they are golden brown and crispy. Make sure not to overcrowd the pan.

Drain and Season
Remove the chips from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt to taste.

Mix the Ingredients
In a medium bowl, combine the chopped tomatoes, onion, cilantro, and jalapeño.

Add Lime Juice and Salt
Squeeze the juice of one whole lime over the salsa mixture and add 1 teaspoon of salt. Stir well to combine all ingredients.

Taste and Adjust
Taste the salsa and adjust seasoning as needed, adding more salt or lime juice to suit your preference.
